Spooky Brownies

I made these little guys this past weekend. They were really fun and tasty!
Try making them, it's super easy and fun!

I got it from a great website by General Mills: liveglutenfreely.com. They have a lot of quick recipes.

Mustard Chicken

Sautéed chicken in mustard-cream sauce

4 boneless skinless chicken breast halves

¼ tsp Course salt and ground pepper

2 tablespoons olive oil

¼ cup chicken broth

½ cup heavy cream

2 tablespoons Dijon mustard

1 teaspoon dried tarragon

1. Sprinkle each chicken breast salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken. Sauté until cooked through, 10 to 12 minutes, turning once. Transfer to a plate or wrap in tinfoil; keep warm.

2. Sauce: Pour the broth into the hot skillet; cook, stirring, until reduced by half, about one minute. Whisk in the cream, mustard, and tarragon. Cook, whisking, until thickened, about 2 minutes.

3. Pour any accumulated chicken juices into the sauce. Right before serving, drizzle the cream sauce over the sautéed chicken put on rice.

White Sauce Chicken Enchiladas

White Sauce Chicken Enchiladas

4 Chicken Breasts

4 Chicken Bouillon Cubes

½ Onion

3 Cups Chicken Broth

3 TBLS Corn Starch mixed with 1 TBLS Cold Water

1 Can of Green Chilies or Jalapenos

1 ½ Cup Cheddar Cheese

¾ Cup Sour Cream

10 Corn Tortillas

Boil Chicken breasts for 30 min with bouillon cubes. Cut into strips or shred. Keep water if you want to use it in place of the chicken broth. For the Sauce begin by sautéing chopped onion in butter. In another pot, boil chicken broth. Add corn starch slurry until thick. Add sautéed onions and green chilies. Turn off heat and add Sour cream and 1 cup cheddar cheese. Place some sauce on bottom of pan. Microwave corn tortillas and add sauce and chicken then roll and put in pan. Cover with remaining sauce and the rest of the cheese. Bake for a ½ hour @ 350°

Mexican Fiesta Soup


This is a bowl of loveliness that we ate together for Tuesday dinner group. It's so easy - you would never believe! All of the ingredients come from a can and it comes together so quick. It's fiber packed too, and of course, gluten free.







Ingredients:
  • 1 can each pinto beans, kidney beans, white beans, black beans, drained and washed
  • 1 can corn, drained
  • 20 oz can tomatoes
  • 4 oz can diced green chilis
  • 1 can chicken broth
  • 2 tsp taco seasoning
  • 1 envelope Hidden Valley Ranch dressing
  • 3-4 chicken breasts, cooked and shredded
Add all the ingredients to a large soup pot, and heat until desired temperature! Or heat in a crock pot 4-5 hours on low.
Serve with cheese, avocado, sour cream, and tortilla chips, if desired.

Getting to know...

Lindsey -Celiac Club President

Lindsey is a senior in the dietetics program at BYU. It was her prerequisite nutrition courses that led to her Celiac Disease diagnosis. Since then, Lindsey has had more energy than ever and loves to run and do yoga. She feels passionately about helping others to achieve wellness through healthy lifestyles, as she has journeyed on her own with Celiac Disease and lactose intolerance. Lindsey loves to try new recipes, and is always up for cooking dinner for friends and roommates. The gluten-free recipes add a new challenge to cooking, which makes the success all the more rewarding. Outside of food and nutrition, Lindsey loves BYU football games, playing guitar, and ping pong games. She is thrilled to be a part of Celiac Club and hopes that all of the members feel welcome.

Anna - Celiac Club Vice-President

Anna Empey grew up in a small farming town in Washington and is a senior at BYU, majoring in Anthropology with a minor in communications. She has had Celiac Disease for seven years. She has been tested multiple times dealing with doctors that disagree and are confused about wither she has it or not. Many people in her extended family have it, including her mom. She has come to the conclusion that she does in fact have celiac and it has become her lifestyle, but it does not even seem strange for her to eat a gluten-free diet. She has been able to adapt well and her cooking skills are increasing, along with her willingness to try new things. She is very excited to be part of this club! She hopes that you will be able to find support and friendship in those who are coping with some of the same challenges that we deal with when we face Celiac Disease. She also hopes you have fun, and learn new things. She is so excited to meet you all and will see you soon!

Lindsay - Celiac Club Treasurer


Lindsay Bell is a senior at BYU studying Nutritional Science. She was diagnosed with Celiac Disease last December, but switching to the gluten free way was no problem since she has had it in her family for about six years. Her mother, Diane Bell, owns the gluten free grocer, Against the Grain, in Taylorsville, Utah, so Lindsay is very knowledgeable about the latest gluten free products that are out there. She is very excited to learn more about others in the Celiac Club and to be able to share her knowledge and support as much as possible!

Leesa - Celiac Club Webmaster

Leesa Allison is a Senior in the Communications department studying Public Relations. She was diagnosed with Celiac Disease two years ago and has been on the diet for one year. She had a difficult time adjusting to the huge lifestyle change and went through the mourning process because she was so emotionally attached to many of the foods she has had to give up. She now feels that going on the diet has been the best thing that has happened to her because she feels better, is so much more healthy and learned she could do hard things. She is excited to be a part of the Celiac Club and hopes she can help others adjust to the diet and have a positive and hopeful attitude even amidst the difficulties of being gluten free.

A Celiacs Dream Come True!


This expo is going to be awesome! We are so excited to go because it will be a great opportunity to gain a better understanding about what is out there for all of us with celiac disease. Where else can you get gluten free samples?


Here is some information about what will be happening at the expo:

We will have national vendors as well as those along the Wasatch Front educating us of the safest and best restaurants to eat at, best stores to shop at, Beauty Products, Bakeries, Cook Books, Vitamins, Baby Food,and more.


Dr. Karnam who is an avid and well respected doctor will be doing an Education Seminar with Q&A to follow.


It is going to be packed with activities. I am also looking for interns (non paid) who would be interested in helping with the event and helping to market to those businesses in Utah County.

I was diagnosed with Celiac disease in January 2009. The diagnosis was a huge blessing and an

end to the decade long battle of constant fatigue and sickness. With that blessing came the challenge of "what next". Where can I shop? Where is it safe to eat out at? What products are there? Which ones are good and actually have some flavor? My goal with the Gluten Free Expo is to educate those with Celiac Disease and our loved ones with those companies that provide answers to our many questions. To know which Companies, Physicians and Restaurants make living with Celiac Disease easier and better. I look forward to seeing you all at the expo.

Celiacs, Silly Yaks, Silly Acts

Last Sunday, a girl in my apartment complex knocked on my door and wanted to borrow muffin tins. I was hesitant to let her, because I knew she would contaminate my pans with wheat flour.
I'm a celiac. I have celiac disease. I don't eat wheat or malt or barley or rye. It makes me sick.
Since it was Sunday though, and I wanted to make a new friend, I let her borrow my muffin tins.
I planned on scrubbing them with soapy water after she returned them.

When she came back two hours later, she had a muffin in her hands.
I thanked her for the muffin, knowing that I would give the muffin to my roommate later. I'm a celiac. I don't eat muffins with wheat flour.
As she was leaving, she mentioned that they were flourless chocolate muffins.
My eyes widened. "Flourless?"
She smiled, and could see right through me.
"You're a celiac," she knew it before I could even nod my head. "My boyfriend's sister has celiac disease too. We always cook gluten-free so that she can eat with us."
So I ate her muffin. Her flourless chocolate raspberry muffin. It was glorious. And I made a new friend.

These kinds of things happen to me weekly. I run into someone whose mom has celiac disease or mission companion had celiac disease. When talking about celiac disease, it's crucial to remember that this is not a sad or debilitating disease.

Celiac disease brings people together. We talk about food and recipes and new products that are coming out. We tell stories about people who feel so much better because they are living gluten-free. This is a disease about togetherness. We learn the most about living gluten-free from each other. We need each other.

The BYU Celiac Club is starting its support group Fall 2010. We will have professional speakers, discussion groups, potlucks, recipe exchanges, and every other lovely thing you can imagine every third Thursday night of the month. To officially join, go to clubs.byu.edu and find Celiac Club. The BYUSA website will say that we're "Restricted" or "Not Recognized," but that's only because our charter is being revamped. Celiac Club will be official in a few weeks, and in a few months, all of the gluten-free silly acts will begin. We'll keep you posted.
